I have been using this chocolate for dipping caramels and truffles since 2010. I usually add about a ounce of cocoa butter per 2 pounds of chocolate to thin it out a bit.

For all other chocolate uses such as cookies, ganache, etc. I prefer Cacoa Barry Mi Amere.
